Last weekend I spent a night in Vernal on my way to my annual float down the Green river. I do the float trip mostly as an opportunity to take some of my grandchildren out for an adventure and see some of my photographer friends. But one of my highlights of the trip is eating dinner at the Plaza Mexicana in Vernal. The restaurant is my all time favorite source of Mexican food in the state of Utah! I discovered it quite by accident years ago when I was looking for a place to eat the night before a river trip. I've been going back ever since! It's a quaint place decorated in brilliant colors, giving you a feeling that you are in Mexico. The staff are very eager to serve you and seem happy to be there. Most important is the food, I love the food. On this trip we ordered their guacamole appetizer, one of our favorites. (Keep in mind we don't usually order appetizers.) My wife and I split a two Chili Relleno dinner. They were so good I was wishing I had ordered two dishes, but I'm watching my weight. Dang! Some friends from Vernal joined us. I introduced them to Plaza Mexicana sometime back and being lucky enough to live nearby have frequented the place a lot since. Unfortunately it's a three hour drive for me. (I don't mind the three hours to get there, it's the three hours back....) I had four of my grandchildren with me they sat in the booth across from me. Crayons and things to color of the back of their place mat kept them busy. One of the kids didn't get his meal. When I realized it I called it to the attention of a waitress and they took care of it right away. The kids downed everything! In the past I've had there Fajitas, and enchiladas covered with chocolate Mole sauce. I've never had a bad meal. The price is a tad bit more than the average Mexican restaurant depending on what you order, but it is worth every penny. If you find yourself having to travel through vernal plan your trip to coincide with lunch or dinner. You will be glad you did!
